Healthy cooking tips

Good nutrition is not a matter of selecting the “right” foods to eat. It’s also important to prepare these foods in ways that will maintain their nutritional benefits. Careful decisions about cooking techniques can have a profound effect on the nutrient content of the foods they prepare. These cooking strategies and ingredient substitution ideas can help retain and, in some cases, improve, the nutritional value of your most popular dishes. They can also help you meet the American Institute for Cancer Research’s recommendations for lower cancer risk and better overall health:

Cut the salt in half in your favorite recipes. Most of the time this will not produce a noticeable taste modify. Consider replacing part of the salt with an herb or spice, flavored vinegar, citrus juice or peel. Garlic or onion power (not garlic or onion salt) work well in meats, soups, and sauces. Make your own mix of garlic, onion, paprika, and parsley flakes.

Use veggie spray or non-stick pans for grilling or stir-frying.

Pick methods of cooking that will retain flavor, color, and nutrients. Steam instead of boiling vegetables. Avoid cooking at high temperatures (except for speedy stir-frying) and long cooking times. Both extended heat and liquid can destroy or leach out valuable nutrients. (more…)

Summer Picnics – Classic Macaroni and Potato Salad Recipes

When it comes to summer picnics, two of the classic foods that come to mind to me are great tasting macaroni and potato salads. I don’t think any summer picnic would be complete without them.

If you are cooking for a large group, both of these recipes can be easily doubled. I recommend refrigerating them for at least 6 hours before serving them.

To prevent spoilage, don’t let them sit out in hot summer heat for more than two hours. If they will be sitting out for long periods of time, sit your serving bowl in a basin of ice or purchase one of those new chilled bowls that are out in the marketplace.

Classic Macaroni Salad Recipe

1 (8 ounce) box elbow macaroni pasta
1/4 cup green pepper, finely chopped
1/2 cup carrots, finely grated
2 tablespoons yellow mustard
4 tablespoons granulated sugar
2 tablespoons white vinegar
2 tablespoons reduced-fat mayonnaise
1 small onion, finely chopped
salt and pepper to taste
1 teaspoon celery seed

Different types of Wine.

Champagne is without question the finest sparkling wine made in the world. Champagne is the name of the wine region located about 90 miles northeast of Paris.

Champagne can contain up to three different grapes: Chardonnay, and the red grapes Pinot Noir and Pinot Meunier. Vintage Champagnes are only produced in the very best years; they are always more expensive than non-vintage Champagnes, but they are not always better tasting. Most Champagnes are the supreme expression of the Champagne blender’s art, assembled from numerous vintages, multiple grape types and various selected vineyards within the Champagne district, then carefully hand made and fermented in the bottle. By making these blends, the Champagne winemakers are able to create a consistent ”house” style and, indeed, each Champagne producer has its own distinct style.

Herbal Tea – Tea For Healing

Herbal teas are different from the traditional teas of the Orient.  When we enjoy tea, we generally enjoy the treated leaves of the Camilla Sinsensis plant, a drink discovered in Southeast Asia and cultivated for thousands of years.  Herbal teas also have a ancient and interesting history.

Any student of medicine will point out that throughout the world, healers have gone into the wilderness to find plants that can ease the illnesses of mankind, or to create wonderful drinks for the sheer pleasure of their favors.  What these healers found was a treasure trove of botanical materials that give us wonderful drinks and restorative medicinal brews.

To understand the role of herbal teas in medical history, you should know that modern science is still carefully evaluating its relationship with the ancient knowledge of Traditional Chinese Medicine, abbreviated as TCM.  The thinking of healers in China is very well-documented and very different from Western scientific thought, but there have been numerous instances of Chinese medical practices being able to serve patients as well as and occasionally better than Western medicine.
